學者分別評估不同抗氧化劑時,發現服用維生素A補充品與提前死亡風險增加16%有關;服用β胡蘿蔔素、維生素E,提前死亡風險分別增加7%與4%。學者發現,服用維生素C並無特別顯著的負面效果,但目前沒有證據顯示維生素C可以延年益壽,必須對此進行更多研究。

榮新診所何一成說明,深色蔬果富含胡蘿蔔素,可以在體內轉化為維生素A,當身體養分足夠時,就不再轉化,是相對安全的補充方式,而從動物肝臟、魚肝油攝取維生素A,則是吃多少累積多少。

缺乏維生素A會有夜盲症、皮膚不健康,但攝取過量會引起中毒,包括皮膚角質粗糙、掉髮,甚至導致肝功能、神經、腦部受損;何一成說,攝取過量,抗氧化的維生素E反而有「助氧化」效果,對心血管疾病與癌症患者不利。

何一成建議,腸胃功能吸收不佳、營養不均衡,或病、手術後,行動不便而無法攝取多樣食物者,才需要利用額外補充維生素,同時在攝取不同營養補充品時,也要注意其中維生素A、E總量是否超限。
