泡麵調味包 加熱會致癌?

台灣衛生署食品衛生處副處長謝定宏表示,網路傳言提到,泡麵的調味包也是味精的一種,應該是指粉狀調味包,裡頭含有鹽、味精跟乾燥蔥花,而不是有食材的調味包吧!

味精的成分是麩氨酸鈉,也是鮮味的來源,但此成分也存在海鮮、高湯等一般食物裡,並非味精所獨有。

理論上,麩氨酸鈉經高溫加熱,化學結構可能改變,但究竟要多高溫、加熱多久,對人體會產生什麼樣的危害,需要更多科學報告。

但個人認為,與其憂心味精、泡麵調味包加熱後可能對人體產生危害,更需要擔心的應該是鈉的問題吧,味精的麩氨酸鈉加上鹽的氯化鈉,對高血壓、腎臟病這些需限制鈉攝取量的病患健康不利,最好節制。

至於一般人若有疑慮,不妨就等熄火後,先嘗嘗味道再斟酌調味包的添加量,減量添加對身體較好!

台北馬偕醫院營養課課長趙強表示,味精的成分為麩氨酸鈉,但這物質在許多天然食材裡都有,也因為有此成分,食物吃起來才會有鮮甜味,很多食物也都要烹煮後才能食用。

麩氨酸鈉加熱後會不會產生致癌物,恐怕要更多研究,更強的佐證才足以說明。但要提醒民眾的是,與其煩惱味精或泡麵調味包裡的麩氨酸鈉,不如擔心經過油炸這種高溫烹調後的食物,有害物質肯定更多。

若民眾還是不放心,也可以等熄火後再放調味料。要特別留意的反而是泡麵所附調味包裡的鈉含量,像高血壓、腎臟病、心血管疾病、糖尿病等患者,吃進太多的鈉會造成器官負擔,痛風患者的鈉攝取量也要節制。(陳惠惠)
