18:8 And he took butter, and milk, and the calf which he had dressed, and set it before them; and he stood by them under the tree, and they did eat.
18:9 And they said unto him, Where is Sarah thy wife? And he said, Behold, in the tent.

台北長庚醫院營養師林鈺珊指出,三蔬二果是指每天3份蔬菜、2份水果,蔬菜一份約100公克,相當於生菜兩碗,煮熟後縮成一碗的份量;水果一份,約一顆拳頭大或切好的一碗。

不過也有特殊情況,林鈺珊補充,胡蘿蔔、牛蒡、洋蔥,1/4即為一份;水果當中,小番茄23粒才叫一份,小草莓16顆,葡萄12顆,棗子得吃2顆才足量,但木瓜每次吃1/4即可。

這樣的份量主要考慮熱量與甜度差異,林鈺珊表示,不同顏色的蔬果,特性也不同,口訣是「綠色護眼、黃色抗氧化、紅色護心、紫色強腦、白色增加免疫力」,民眾多攝取不同顏色,健康加分。

蔬果裡的維生素、礦物質抗氧化、膳食纖維治便祕,但如何在三餐中多多夾帶偷渡蔬果,增加攝取量?林鈺珊建議,將水果放在容易取得的地方、吃自助餐時可選有蔬菜做配菜的菜,如肉絲竹筍、牛肉炒青菜,或者吃麵時,多點燙青菜。此外,多用水果入菜,加點創意巧思,如木瓜燉魚、紅龍果涼拌、葡萄拌蘆筍等。

林鈺珊說,飯後隔半個小時吃水果,有助於鐵質吸收;飯前吃水果,是針對想減肥的人,增加飽足感的方法。

另外,還有很多人習慣切完水果會泡鹽,但在追求低鹽、降低高血壓觀念下,最好避免這麼做。
