據生命時報報導,近年來,日本的科研人員經對發酵食品的長期研究及實驗得知,它的真正魅力在於其有與藥品媲美的奇特功效。故日本的保健醫師們建議:現代人應該提醒自己每天攝取一種發酵食品,這樣可以維持健康、促進長壽。

食品發酵 熱量變低

發酵食品是人類巧妙地利用有益微生物加工製造的一類食品,通過發酵使食品中原有的營養成分發生改變並產生獨特的風味—————簡單來說,加入的微生物就像一台台小小的加工機,對食物的每個細胞挨個進行處理,增加一些有營養的物質、去除一些沒營養的物質,順便改變味道和質地。

那發酵又有哪些好處呢?發酵時微生物分泌的(酉每)能裂解細胞壁,提高營養素的利用程度。肉和奶等動物性食品,在發酵過程中可將原有的蛋白質進行分解,易於消化吸收。微生物還能合成一些B族維生素,特別是維生素B12,動物和植物自身都無法合成這一維生素,只有微生物能「生產」。發酵食品一般脂肪含量較低,因為發酵過程中要消耗碳水化合物的能量,是減肥人士的首選健康食品。

在發酵過程中,微生物保留了原來食物中的一些活性成分,如多糖、膳食纖維、生物類黃酮等對機體有益的物質,還能分解某些對人體不利的因子,如豆類中的低聚糖、脹氣因子等。微生物新陳代謝時產生的不少代謝產物,多數有調節機體生物功能的作用,能抑制體內有害物的產生。

三類食品 應該多吃

我們現在常吃的發酵食品主要分為榖物發酵製品、豆類發酵品、乳類發酵品。

穀物製品主要有甜麵醬及米醋等食品,它們當中富含蘇氨酸等成分,它可以防止記憶力減退。另外,醋的主要成分是多種氨基酸及礦物質,它們也能達到降低血壓、血糖及膽固醇之效果。

豆類發酵製品包括豆瓣醬、醬油、豆豉、腐乳等。發酵的大豆含有豐富的抗血栓成分,它可以有效地溶解血液中的血栓等物,起到預防動脈硬化、降低血壓之功效。豆類發酵之後,能參與維生素K合成,這樣可使骨骼強壯,防止骨質疏鬆症的發生。

酸牛奶、奶酪含有乳酸菌等成分,能抑制腸道腐敗菌的生長,還含有可抑制體內合成膽固醇還原(酉每)的活性物質,又能刺激機體免疫系統,調動機體的積極因素,有效地預防癌症。所以,經常食用酸牛奶,可以增加營養,防治動脈硬化、冠心病及癌症,降低膽固醇。利用乳酸菌來發酵的食品,其任何一種東西均可調整腸腔內菌群的平衡,增加腸蠕動,使大便保持通暢,預防大腸癌等的發生。此外,酸牛奶都能有效地控制血壓的「上揚」,防止動脈發生硬化,保護心臟,大家不妨多青睞這些食物。

一般來說,每日選擇性食用一至兩種發酵食品即可。但須注意的是,腐乳豆豉含鹽較高,高血壓和心臟病人應控制食量。
